In the Kitchen will be the category where I will post some of the recipes I cook for my family. I promise you these are super-duper easy recipes because I’m really not an expert in the kitchen plus the fact that I don’t want recipes with so many steps/how-tos. Just 4-6 instructions, anything more than that, I skip the page of my recipe book and look for simpler recipes. So newbies in the kitchen, I hope you’ll try my recipes or suggestions and let’s share kitchen secrets!
I guess by now you know that my family loves Japanese curry. Check my Japanese Beef Curry recipe. But since it’s lenten season, let’s go meatless and use tofu instead.
You’ll just follow the basic curry recipe, and top the fried tofu. So easy!
Japanese Curry with Tofu Recipe
Ingredients
1 medium onion, sliced
1 Carrot, diced
1 Potato, diced
Japanese Curry mix
Tofu
Oil for frying
Instructions
- Slice the tofu into squares.
- Heat oil in a pan and fry the tofu squares until golden brown. Set aside.
- In a separate pan, saute the onions, carrots, and potatoes.
- Add about 1/2 cup water. Let it boil. Simmer until the carrots and potatoes are soft.
- Add the curry mix, I use 1 or 2 squares. Just adjust according to your preference.
- Arrange in a plate and put the tofu squares on top of the curry sauce.
This is a yummy meatless dish you can cook not just for lent. Enjoy!
