In the Kitchen will be the category where I will post some of the recipes I cook for my family. I promise you these are super-duper easy recipes because I’m really not an expert in the kitchen plus the fact that I don’t want recipes with so many steps/how-tos. Just 4-6 instructions, anything more than that, I skip the page of my recipe book and look for simpler recipes. So newbies in the kitchen, I hope you’ll try my recipes or suggestions and let’s share kitchen secrets!
3 Key Ingredients! This super simple recipe can be cooked in under 30 minutes. The use of bottled salsa is really a lifehack, it’s already seasoned so no more guessing on how it should turn out. You can thank me later :p
Chicken Salsa Melt recipe
Ingredients:
3 pcs. chicken breast (lightly seasoned with salt and pepper, OR you can just skip the salt and season only with pepper)
Tostitos Salsa
Cheese (you can use quickmelt cheese, I used the square ones for sandwiches
olive oil
Optional:
sour cream for dipping
How to cook:
- Heat the olive oil in a nonstick pan.
- Pan-fry the chicken breasts on medium heat. The chicken breasts will be cooked in around 10 to 15 minutes (depends on its thickness/size), turn it once if you see the sides turn white. Cook on the other side.
- Once the chicken is cooked, lower the heat. Add the salsa. Make sure that the chicken are covered with the salsa. Cover and simmer for a few minutes.
- When the salsa gets bubbly, it’s time to add the cheese. Add the cheese on top of the chicken breasts. Cover and wait for the cheese to melt.
Note: When I cooked this before, I would pan-fry the chicken and then arrange them in baking dish, add the salsa and cheese and pop them in the oven. But laziness got in the way and I found out cooking them all in a pan works too!
Serve with sour cream on the side.
