In the Kitchen will be the category where I will post some of the recipes I cook for my family. I promise you these are super-duper easy recipes because I’m really not an expert in the kitchen plus the fact that I don’t want recipes with so many steps/how-tos. Just 4-6 instructions, anything more than that, I skip the page of my recipe book and look for simpler recipes. So newbies in the kitchen, I hope you’ll try my recipes or suggestions and let’s share kitchen secrets!
Between me and my husband, Jeff, he likes veggies more than I do. Whenever there’s a salad section in a buffet, he would help himself for a serving or two. Last week, he wants Greek salad so I made a mental note to buy the ingredients in the grocery. I also like Greek salad because there’s feta cheese!!!
Greek Salad Recipe
Ingredients
FOR THE SALAD:
Romaine lettuce, washed and chopped
2 pcs. tomatoes, chopped
1 cucumber, chopped
1 medium red onion, chopped
black olives
feta cheese
FOR THE DRESSING:
juice of 1/2 lemon
1/4 cup extra virgin olive oil
salt and pepper to taste
Instructions
- Mix the chopped romaine lettuce, tomatoes, cucumber, onion in a bowl. Top with olives and feta cheese.
- In a jar, add the lemon juice and EVOO. Shake well. Add salt and pepper to taste. Go easy on the salt because olives and feta cheese are already salty.
- Drizzle the dressing over your salad.
This is so easy, and healthy, and so delicious!!! I can make my vinaigrette and store it in the ref and use whenever I want to have a salad.
Try it mommies! No cooking required plus may nabibili namang pre-washed and pre-chopped Romaine lettuce.
